Today we’d like to introduce you to Kristin Collins.
Hi Kristin, please kick things off for us with an introduction to yourself and your story.
I began Fluff on 2014 as a side business while I worked full time here in Austin. I was making meringues for friends’ weddings, baby showers, dinner parties, and what-have-you for several months just out of my home kitchen under the Texas Cottage Foods law, but it became clear rather quickly that I needed to move to a commercial kitchen – so I did. Once I secured a spot for bake-to-order, I then started looking for my own space so I could open a proper brick and mortar and really started to plan out Fluff as we know it now.
It took several years and a lot of trials and tribulations (with multiple spaces falling through) to get the Fluffery open in September 2018 at our current space in Rosedale Village and we’ve been slinging delicious treats and coffees ever since!
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Absolutely not. HA!
It took four years to get Fluff open as a proper functioning bakery. Several contracts on other locations fell through (one of which the landlord threatened legal action against me because of something the City required, but then declared was his responsibility (read: he lied) – I lost *a lot* of money and over a year of time in that situation.
And then, let’s not even talk about construction issues and the City of Austin permitting requirements and process! I don’t think Austinites really understand the incredible bureaucracy that exists in this town and how onerous it is for small businesses to compete with less capital.
Those are just the ones that stand out, but there were many, many, many more! It’s been a long, arduous road to get to here…. you know, 16 months into a pandemic that decimated sales and our entire industry.

Fluff Meringues & More is a sophisticated, modern patisserie that focuses on delightful treats and experiences with an international and artful flair in the heart of Austin on lower Burnet Road.
We are known for our specialty – our meringues (obviously), but more so I think when people think of Fluff Meringues & More they think of a fun, relaxing place to catch up with some friends and have excellent, unique treats – be it just a small bite with a coffee/tea or one of our extravagant Afternoon Tea services (and maybe a refreshing carafe – Passionfruit Rose.
I’m very proud of the brand personality + character that we’ve built at Fluff. I have an advertising background so creating, then building a robust brand was not only important to me but a lot of fun! It’s got a sophisticated yet quirky personality, denotes high quality, and exudes good vibes – or so I am told through our legion of loyal customers.
What was your favorite childhood memory?
Oh gosh. So many to choose from!
I really liked (and still do) making and creating things – anything really!
I suppose I’d have to say all Saturday mornings as I’d wake up and watch cartoons (this was the 80s!). Then, my mom and I would make blueberry pancakes and then it’d be project time! She’d start something (usually sewing) and I’d start one as well.
My favorite “project” was building a four-bedroom cardboard dog house with exacto knives (a 7 yo given an exacto knife is questionable, yes) and duct tape. It even had carpet! I was so proud of that ‘house’, then it rained…lol.
