Jaqueline, we appreciate you taking the time to share your story with us today. Where does your story begin?
After going through a divorce and losing my job, I found myself in a difficult situation. My world had changed so drastically that I wasn’t sure where to turn next. With my future uncertain, I boldly decided to risk everything I had left and invest my savings into something that had always brought me comfort: food.
Years ago, in Mexico, my sisters and I used to sell food to make a living. We spent countless hours preparing dishes from scratch, feeding our community with recipes passed down from generations. It wasn’t just about making money; it was about sharing a part of ourselves and connecting with people through flavors and culture. Looking back on those memories, I realized that those experiences had taught me resilience, creativity, and the value of hard work.
It became clear that this was exactly what I needed to do again. Despite the uncertainty and the fear of failure, I knew that returning to what I loved could help me persevere through the difficulties I was facing. Starting a business from the ground up wouldn’t be easy, but I was determined to use my passion for food as the foundation to rebuild my life.
With that vision in mind, I set out on the journey to create something meaningful—not just a business, but a new chapter of hope, healing, and self-reliance.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
There were times when I wondered if I had the strength to keep going, especially during the pandemic when everything came to a standstill. Finding clients became harder, and the uncertainty of the world made the future feel even more fragile. I faced obstacles that I couldn’t have foreseen, yet each one forced me to dig deeper, to adapt, and to fight for the business I had worked so hard to build.
Despite the setbacks, I’ve continued to push forward, holding on to the hope that this path, however difficult, will lead to something meaningful.

Our family-owned Mexican food truck brings the warmth and comfort of Abuelita’s home-cooked meals straight to you. Our mission is to make you feel at home with every bite. We offer a diverse menu of Mexican favorites, with our most popular dish being our savory menudo.
We’d be interested to hear your thoughts on luck and what role, if any, you feel it’s played for you?
I don’t believe luck plays a role in success. It’s all about dedication and hard work getting you where you want to be.
