Today we’d like to introduce you to Julio Palacios

Hi Julio, thanks for joining us today. We’d love for you to start by introducing yourself.
Our son Julio Eduardo started the business delivering Mexican desserts to Mexican Restaurants and he named Papi’s Pies to honor his papi’s (Jose) recipes. After a while he decided to leave and we took it in our hands. At that time we were working in a commissary kitchen witch was very painful. Our business was going great and we had around 27 clients and a lot of work. We found the place where we are now in 2016 and we started baking there. Our friends came and saw the place and they got in love of it and suggested the we should open a small coffee shop. Since we had experience having a restaurant in Mexico City before we thought it was a great idea. All our friends came to help setting the shop. We had from 6 in the morning to 3 pm more than 10 friends doing yard, cleaning garden, kitchen, fixing everything. One of them, now a very successful business lady Wendy Hill Conklin brought some old chairs and fixed them doing the upholstery and in 5 days the place was set. Since Jose and I are part of the artistic community we wanted to offer our walls to local artists and we placed special hangers to place the art.
People loved the place. We built our menu with dishes we loved the most from our trips and from our mom’s kitchen and became with a nice fusion between Latin American and European cuisine. Jose is Mexican and Julio Bolivian both with European roots.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Papi’s success history is totally attached to our Round Rock community. We survive through the pandemia because of their love and support. During this time we had customers buying just a coffee but leaving big tips letting us know that we were loved and that they wanted us tu succeed.

And this month of February we celebrate 8 years serving our clientele and supporting our artists with monthly exhibitions at Papi’s walls.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
Jose is a graduated student from the Beautiful Arts Institute in Mexico City as stage designer while I was graduated from the same Institute as Theater Director and we both are professional photographers. During or live we share our career with our love for the food and we establish a restaurant in Mexico City.

We had the opportunity to work with renowned actors and directors in Mexico until we decided to come to United States to be close to our children. Once in this county we needed to reinvent ourselves and here we are.

What quality or characteristic do you feel is most important to your success?
Our passion. We love what we are doing. We want each customer be happy with the place and the food. We wanted them to have a real experience with Papi’s flavors and service.
