Hi Chris, so excited to have you with us today. What can you tell us about your story?
Throughout American history, the neighborhood butcher was the place to go – even if just to hang out on the street corner in front of the store. Everyone knew the neighborhood butcher, and everyone knew that the butcher had the best secrets for the freshest meats, the best cuts, and the best preparation methods to make dinner time a
rousing success.
Somewhere along the way, the influence of the neighborhood butcher got lost among bustling suburbs and urban sprawl. Supermarkets became the new fad and popped up at every major intersection. Shopping for great meals became a chore, and the nostalgic feel and knowledge of the local butcher was lost in the shuffle.
At Southern Steer Butcher, we remember those days, and we’re bringing them back to today’s consumer. Here, you’re not a just a “consumer”, you’re our guest – no, more than that – you’re family. You’re our neighbors, and we’re a part of the neighborhood. In fact, we actively look to give back to our neighborhood and to neighbors in need through our Project 52 program. We don’t believe in sacrificing quality for the sake of convenience. And, we believe our butchers and our staff should return to their roles as “culinary consultants”, giving you the ingredients, secrets, tips, and tricks to make incredible meals for your family.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
We opened on Fathers Day in 2024 with great support from our local community. As Southern Steer Butcher is a new, modern butcher experience, we’re passionate about great food and great experiences for our guests. By and large, the biggest challenge is exposure however we believe that supporting local will bring locals. As such we have sponsored every PTO in LTISD with give back nights, the twelvethirtyone organization, Lake Travis Football, Lake Travis Women’s Lacrosse, and numerous others.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
From premium beef, chicken, and pork to delectable sides and appetizers, we’ve got complete and delicious meal solutions ready for you and your family. We’ll help recommend the right seasonings or marinades to get that perfect flavor and provide the best preparation and cooking methods for your chosen meal. We’ll even give you a recipe or two if you’re looking for something new. We’ve also gone one step further and introduced Himalayan salt dry aging to level up your experience. There’s no longer a need to have an expensive dry ager in your home, or, to go to a luxurious steak house to have a dry-aged steak – we have them available every day. And, for dry-aged enthusiasts, you can even reserve space in our dry ager as a member of our Dry Aging Program, complete with your own custom name plate. How cool is that?
