Meet Eric Stees of Farm To Table Burritos

Today we’d like to introduce you to Eric Stees.

Hi Eric, please kick things off for us with an introduction to yourself and your story.
Owner, Eric Stees, began his health journey after being diagnosed with Ankylosing Spondylitis (a chronic inflammatory arthritis) while serving in the US Navy on a nuclear submarine. In college, he met his wife, Meghan, who was also navigating how to use food as medicine to resolve hormonal imbalances, thyroid dysfunction and PCOS. Together, Eric and Meghan have discovered the transformational power of REAL food and have been on a mission ever since to make real food more accessible.

What started out as a paleo based framework built upon chicken, broccoli, and coconut oil eventually grew into a beautiful discovery that you can actually eat almost ANYTHING you like… just level up the ingredients!

The only problem is that cooking healthfully is a FULL. TIME. JOB. From sourcing local ingredients, to washing, chopping and preparing meals, to cleaning and dishes, not to mention careers, relationships, and hobbies, they were maxed out on time. So they set out to create a product for themselves and for others that was truly clean, truly convenient ,and truly delicious!

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It was a labor of love to create our epic housemade, grain free tortilla. As health-conscious consumers, we’ve become accustomed to sacrificing taste and texture for ingredient upgrades – not anymore! After over 50 different recipes and countless hours smashing tortillas, the perfect blend of nut and root flours was created. They look like flour, taste like flour, and wrap like flour, without any of the gluten, glyphosate, or guilt.

Once we had the tortilla mastered, we had to fill it! The challenge was to offer our favorite comfort food classics wrapped into a burrito, engineering every bite to be the perfect symphony of protein, fat, and fiber. Our recipes maximize nutrient density while also offering a balanced flavor profile so you can have the perfect fork-full of each component in every bite.

What has been the most important lesson you’ve learned along your journey?
Keep moving forward. Everything that happens in your business is for a reason. Success? Awesome, keep doing what you’re doing. Failure? Nope, just a nudge to pause, reflect, and pivot. In our family and our business, we’re all about seeing challenges as opportunities!
