Today we’d like to introduce you to Cassie & Vernon Adams & Pajarito.
Hi Cassie & Vernon, please kick things off for us with an introduction to yourself and your story.
We are a small, locally rooted, farm-to-table kitchen dedicated to honest food and thoughtful sourcing. We got our start in 2015 in Albuquerque, NM. Our menus are built around organic, seasonal ingredients from nearby farms and producers we know and trust. Every dish reflects our belief that food tastes better when it’s grown with care, prepared simply, and shared in good company.
We cook with the seasons, allowing what’s fresh and available to guide our menu. That means dishes may change often—but quality, intention, and flavor never do. From house-made staples to carefully selected local products, everything we serve is crafted to celebrate the land and the people behind it.
At our core, we are about community—supporting local farmers, minimizing waste, and creating a welcoming space where good food brings people together.
We all face challenges, but looking back would you describe it as a relatively smooth road?
No smooth roads here. Some struggles include breaking the normal expectations of what a food truck is and what they serve, weather, relocating to a new area with zero experience in the area, finding local growers within a 20 mile radius (Texas is Huge), and now with two kids everything has changed.
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
Chefs Cassie and Vernon. We are a husband-and-wife trained chef team running a small, farm-to-table mobile restaurant with our family at the heart of everything we do. We are most proud of how we have been able to adapt and evolve our business to include our children. From having them join us at local food events where they learn and see other creatives and learning from them. And one particular event was in Luling, Tx where they sat in on a talk from a beekeeper. And that one interaction has blossomed into a great relationship and maybe a new sweet hobby for the kids in the future.
We will continue to evolve and learn.
Networking and finding a mentor can have such a positive impact on one’s life and career. Any advice?
Ask the questions. Let go of the ego and be a student. Our kids will be our greatest teachers.
