Life & Work with Liz Everett of East Austin

Today we’d like to introduce you to Liz Everett.

Hi Liz, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Ensenada ATX was founded by my daughter, Stephanie, and myself. We are originally from Ensenada , Baja California Mexico—a coastal region celebrated for its seafood, wine, and iconic fish tacos.

After Stephanie relocated to Austin, she deeply missed the flavors of home. Inspired by her roots and her love for Baja cuisine, she invited me to bring our family recipes to Texas. Together, we launched Ensenada ATX, with the help of my eldest daughter, Cristina, and my granddaughter, Kristell, who joined us that first summer to help get the business off the ground.

We are incredibly grateful for the support we’ve received—from the Austin community, our friends, our family and our loyal customers who continue to support us. Because of them, we are where we are today.

We all face challenges, but looking back would you describe it as a relatively smooth road?
opening ENSENADA ATX was our very first venture into the food truck world. While we started with little experience, the process went surprisingly smoothly. Finding the right people to guide us through permitting and logistics made all the difference.

Along the way, we’ve been overwhelmed with support and kindness from the hospitality community, fellow food truck owners, and friends. Thanks to them—and to our amazing customers—it’s been a rewarding and steady road.

We’re truly excited to be celebrating almost four wonderful years of sharing Ensenada flavors here in Austin.

Can you tell our readers more about what you do and what you think sets you apart from others?
We are a food truck specializing in Baja-style seafood and street food, proudly serving the Austin community. What sets us apart is our deep commitment to bringing the flavors of our hometown—Ensenada, Baja California—to every dish we serve.

We are best known for our fish tacos, fresh ceviches, and our signature Limonada Topo. We are incredibly proud of where we come from and deeply grateful for the support we’ve received along the way—the community that welcomed us, the doors that have opened, and the opportunities that have followed.

Ensenada ATX is a three-generation, women-run food truck, and it has become the foundation for so many beautiful things to grow. What started as a small side of salsa MACHA at the truck has now blossomed into my eldest daughter Christina’s salsa brand, ENSENADA SALSAS which has grown into a CPG product and can be found on shelves around Austin today.

We’re also proud to support my granddaughter Kristell, who saw an opportunity when we didn’t offer desserts and decided to sell her own brownie business—bringing her own Mexican twist to something sweet. And soon, my daughter Stephanie will be launching her own CPG product, which we’re excited to introduce to Austin very soon.

Opening this food truck didn’t just allow us to share the flavors of Ensenada—it opened doors to new dreams, new projects, and new opportunities for each of my daughters and my granddaughter. We are honored to continue growing, creating, and sharing our food, our culture, and our story with the community.

How do you define success?
Success, to me, is living a life I enjoy. It’s being happy in what I do and approaching each day as a new opportunity to find joy, growth, and gratitude. If I can do that consistently, I consider myself successful.
