Today we’d like to introduce you to Ella Tasso S Adams.
Hi Ella, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I was raised on Lake Superior in northern Wisconsin with a farm to table garden and lifestyle. I was taught at a very young age to understand where and how your food comes from. Also, how to incorporate edible flowers into dining experiences. My mother is an excellent self-taught cook and I learned at a very young age from helping her. I became obsessed with baking and decorating desserts with fresh flowers from our garden. I continued to educate myself in all aspects of cooking and baking and decided to go to grad school at le cordon bleu in Austin, Texas. I excelled in class and knew I wanted to have my own cake business. I worked in a few restaurants to gain a bit more business knowledge and then was the executive chef for a tech company that lasted eight years. I am currently the founder and sole baker for my company Sidepiece. I provide custom-made organic cakes with homegrown flowers from my garden. I have continued with the roots I was given at such a young age and am so grateful to be able to share my trade with my clients!
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I was raised to live off the land and to farm harvest and cook all our food so hardwork and dedication to my trade has come natural. The hardest part was leaving my home in Wisco to start a life and business in Texas. I’ve had to educate and practice the business side of a company and I’ve absolutely had many difficulties and disappointments. I take them all as a challenge to become a better business owner moving forward.

I create one of a kind custom made cakes. I specifically make them salty sweet and listen attentively to each client’s request. If we are a fit on both ends then I’m always honored to be a part of their special day. I’m most proud of my attention to detail and consistency.
Alright, so to wrap up, is there anything else you’d like to share with us?
I always wanted to be a professional figure skater but being a pastry chef is where I landed. I still can do a double axel… with some serious practice! Hahaha
