Today we’d like to introduce you to Michelena Borberg.
Michelena, we appreciate you taking the time to share your story with us today. Where does your story begin?
Born and raised in Mexico City, I feel like passion for food is built in our bloodstream. While most kids would anxiously wait for the weekend to enjoy a movie or time with their friends, I would instead beg to be taken out to dinner and the theatre. Dining in Mexico City gave me my “food identity”. There was something about experiencing diverse dishes and flavors that called my attention from a young age, which was reinforced by my parents’ love for street markets, unique flavors and rare foods. However, it wasn’t until my 20’s that the love affair with cheese and charcuterie grew on me. I remember walking by the streets in Nice, France and taking in the aromas of cheese… all my friends thought I was crazy, but I was drawn to the stands and ended up buying way too much cheese. Ha!Fast forward a few years and I find out about a Grazing Table trend in Australia going strong… and I decided to give it a try for my husband’s 30th birthday party…. and it was a hit! And so, I realized it was time to live out my passion and do what I love most – bringing people together through decadent food and displays.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Grazeology started in 2019, just as I had moved to Austin, had become a new mom and felt trapped between staying home or creating something meaningful for our future. Having a background in sales and operations, did not make it easy to understand and start in the food industry, yet, my passion for cheese and food was far greater than any obstacle and I jumped all in. I set a goal from the beginning that weddings was a niche a wanted to be a part of, yet I knew no one in the industry and had to knock on doors to get my name out. Little by little I started gaining a reputation and my unique style paired with high quality ingredients gave way for bookings to start coming in. Just as I prepared for the busiest wedding season, COVID hit and everything was cancelled. At that moment, I realized I needed to pivot and focus on cheese platter deliveries, and it’s 2021 and we still “Keep Austin Grazing”! Cheese platters have become Grazeology’s #1 item sold as corporate & personal gifts, as well as the perfect addition to small gatherings or intimate celebrations. We couldn’t be more grateful and humbled by the opportunity Austinite’s have given us to be part of their events and we will keep working hard to bring unique and high quality offerings to our community of grazers!

Not only do we aim for visually appealing grazing boards, but they have to make your taste buds go wild! Grazeology is the science behind eating small portions of food, and we live by it. Every cheese we use has been meticulously chosen to pair perfectly with the rest of the ingredients on a board. Although grazing tables are on pause at the moment, we love creating cheese platter displays, or grazing cones displays that are perfect for socially distant events. We have something for every style of event!
