

Today we’d like to introduce you to Gillian Gagliardi.
Hi Gillian, we’d love for you to start by introducing yourself.
My name is Gillian, but my friends call me G. I grew up in the heart of Wilkes-Barre, Pennsylvania in a house of nine! My mom raised eight wonderful children and we’re all extremely close, even to this day. I grew up walking to the beat of my own drum, but my family has always kept me in tune. I couldn’t imagine growing up any other way. After college, I worked a few sales jobs, got involved in my church, spent time with family and moved around Central PA. Towards the end of 2020, I knew I was ready for change and decided to follow my best friend to Austin, TX. So, I completed my MBA, packed up my Hyundai Elantra and drove 30 hours South in March 2021. Leaving my family and everything I knew was a giant leap of faith, but through prayer and courage, I can now say it was the best decision I’ve ever made. Since landing in Austin with no job, I’ve worked in some great roles. One of those roles includes being the C-suite EA and Marketing Manager for a Biotech Company. I’ve networked with and met amazing entrepreneurs in Austin and have embraced the fact that this sunny city breathes opportunity. Now it’s my turn to put the work in. I’m starting my own business! I love to bake and have started a baking company called, Simply Baked Texas. My first company is only starting out but it’s just the beginning for this young entrepreneur.
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Life is all about the journey, and even though we wish it were smooth, our characters are built in the storms. Learning how to live alone in a new city, new environment, climate, culture, etc. was the first big challenge. This life is very different from the one that I lived back in PA. But with the help from God and new lifelong friends, I have found peace, joy, courage and endless support. The other challenge that I am facing is starting a new company! I’ve studied business for ten years, but being a new entrepreneur is not going to be a smooth road. The word entrepreneur comes from a French infinitive meaning “undertaker”… I’m certain I will hit many bumps in the road. But my curiosity into the unknown excites me!
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Simply Baked Texas. That is the name of my bakery! Right now, we are only selling chocolate chip cookies, but will quickly be expanding in the next few months. The chocolate chip cookies are out of this world, and everyone who tries them can’t get enough! Don’t believe me, check out the reviews recorded on Instagram – @simplybakedtexas. The cookies are bite-sized, soft and delicious. They are sold by the dozen in cute boxes that are perfect for parties, events or the ride home from the farmer’s market! When you come to the farmer’s market, look for The Cookie Garden.

Any advice for finding a mentor or networking in general?
Always say yes. I’m more of an extrovert but saying yes to going new places or meeting new people excites me. Also, you never know who you are going to strike up a conversation with. In addition, I seek out networking events and I’m intentional about my goal at each one. If you’re not too comfortable meeting new people, write down some questions/talking points to help you through! I’m also blessed to be involved in 2 bible studies across Texas. The 2 studies are filled with approximately 50 Christ-centered women who are ambassadors for Him. In the 50, there are wonderful women of many cultures, professions and backgrounds. I have learned so much about life, love and God in those conversations that I will take with me through the rest of my life.
