Meet Garrett Elliott of Lazy G BBQ

Today we’d like to introduce you to Garrett Elliott.

Hi Garrett, thanks for joining us today. We’d love for you to start by introducing yourself.
I have loved BBQ and have been drawn to it since I was a kid. Going to Louie Mueller bbq in Taylor with my dad was always a treat for me, watching Bobby Mueller cut meat and toss a small chunk of brisket on everyone’s tray as they waited was something special. As I became an adult, I got into competition BBQ, and it didn’t take long to figure out that the food for competitions was completely different than the BBQ I wanted to eat. As I worked on recipes for competitions, I gradually ended up working on stuff that I wanted and enjoyed eating. Fast forward a few years I was asked by the pastor at our church to cook some pulled pork for a spring festival we were having. After that, work spread quickly, there was a BBQ nerd in the congregation. Next thing I know I was being asked to cater small parties for families and get-togethers.

After a while, I was approached by 2 guys that I played in the band with, Bill Wassenaar and Keith Minnie, about making a real run at the BBQ business. This is where we are now, 3 guys that are very unlikely partners serving up classic central Texas BBQ with some twists.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back, would you say it’s been easy or smooth in retrospect?
The road to this point has not been a smooth ride at all. We pulled the trigger on a trailer build right in the middle of COVID, as the build was closing in on the due date, material shortages started happening. We took possession of the trailer 3 months late which ate up a lot of our capital that was supposed to help float us on getting up and running full speed. Marketing has been a struggle, more so than I thought it was going to be. Social media is so important, and being an older guy I had to learn a lot of new skills on how to market on social media.

Thanks – so what else should our readers know about Lazy G BBQ?
We are a BBQ trailer located in Cedar Park that specializes in Central Texas BBQ. Brisket is what started it all and it’s what keeps the lights on. We do the classics like brisket, turkey, pork ribs, sausage, and chicken for proteins. We also keep things mixed up with some out-of-the-box menu items like our smoked mushrooms, our potato salad isn’t a classic potato salad, it is a baked potato salad. We have a smoked turkey sandwich with a reduced strawberry puree and goat cheese, our smoked burger is one of our top items. On top of that, we try and rotate some out-of-the-box specials in and out to keep things fresh and new.

We source all top-quality ingredients to ensure a top-quality end product. All our sauces, pickles and jalapenos are made in-house, we really take quality seriously. Our briskets are all prime certified Angus from 1855. They really have a nice beefy flavor.

Who else deserves credit in your story?
Without my 2 partners, Bill and Keith, none of this would have happened at all. We all have unique personalities that have really helped the Lazy G brand bloom and grow. Most importantly, our wives and families are the backbones of our business. They may not work with us, but they pick up a lot of slack when we spend to many hours at the trailer or prep kitchen.
