Hidden Gems: Meet Clayton Johnson of The Pizza Spot

Today we’d like to introduce you to Clayton Johnson.

Hi Clayton, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I began my Pizza journey as a teenager looking for working opportunities. I attended Lousiana Tech for a few years and dropped out to join a traveling Pizza Company that vended at music festivals. It was in New Orleans at a festival where I found a true passion for serving and making New York Style Pizza. Since I have traveled across the country at various gatherings, concerts, festivals, and events preparing and producing the same New York Style Pizza. I’ve helped establish Pizza restaurants in Oregon and California that brings the familiar East Coast traditions. In February 2020, I re-established a connection with my now partner Aubrey, which is a major contributing factor in how The Pizza Spot emerged into creation. Since then, together, we have worked to find a place to call home and bring our fantastic product to the area.

We all face challenges, but looking back, would you describe it as a relatively smooth road?
I wouldn’t say it’s been smooth. But when it comes to learning curves, I feel we got a head start in our direction. The biggest challenge for us was finding a proper location to settle into to begin the build. Learning how to properly organize and maintain business paperwork has been something I’ve had to learn the most of throughout this process.

Appreciate you sharing that. What should we know about The Pizza Spot?
The Pizza Spot is the best New York Style Pizza in the mobile food circuit. We specialize in music festivals and the ability to serve 100s or even 1000s of patrons in a timely manner to ensure they’re experiencing as much of the event as possible. We serve the biggest slices with the boldest flavors. Once you try a Joshua Tree slice or Gilroy, you’ll never forget. Everything is made from scratch ingredients that are sourced with quality in mind.

Before we let you go, we’ve got to ask if you have any advice for those who are just starting out?
Anybody that is starting out. Stay motivated, stay determined. Know what you do and what you’re going to do before you do it. Whatever product or process you do, be able to do it with your eyes closed. Practice hard. Work out your craft.
