Today we’d like to introduce you to Stephanie Delgado.
Hi Stephanie, we appreciate you taking the time to share your story with us today. Where does your story begin?
We have a tradition of having family/friend dinners once a week. We always gave food away to go to our family. My sister commented about us selling food, so we created a post on Facebook selling heart-shaped Valentine’s Day taco trays on Valentine’s Day. That day was a hit, and we decided to start doing pop-up events, and I took off. We did so many pop-up events that we could buy a food truck, which was amazing because we didn’t have to set up our station. Having a small business and meeting so many amazing people has been a massive blessing.
Would it have been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
It has been challenging having a small business. We struggled with permits and finding the right resources to start our business, but we have had amazing people help us through it.
We’ve been impressed with ESO’s Tacos, but for folks who might need to be more familiar, what can you share about what you do and what sets you apart?
Esos Tacos is a small business owned by my husband Ben and I. In February 2021, we started selling street tacos. We smoke all types of meat, but our favorites are brisket and carnitas (pork). We do many pop-up festivals all over the Buda/Kyle area and are usually posted at Growler Express in Buda. We are also a catering business. We have done many weddings, quinceañeras, and graduation parties. I love meeting new people and engaging in conversations.

We are very passionate about our business and love to help people.
