
Today we’d like to introduce you to Tracey Torres
Hi Tracey, thanks for joining us today. We’d love for you to start by introducing yourself.
1977 brought me to America, 1982 brought me to Austin. Being a kid in 80s Austin was a vibrant time to be immersed in the Arts and Music all the local talent had to offer. I knew this city is where I wanted to create and become a business owner someday.
The Pandemic found me scrambling to change my career path. I had always loved cooking whether it professional or personal, so it only seemed natural to take my passion and use it to make my way.
Two years ago, I started my journey. I became a Lead Line Chef at a kitchen that allows me to express my talents on the Specialty Chef line. My confidence in the kitchen and my yearning for the British fare I had grown up on, made me realize that it was time for me to venture out on my own. With this, Wake An Baked Spudz was formed.
Wake An Baked Spudz features Gourmet stuffed spudz with a vibe. I’m still in the early stages of obtaining my CBD license, so in the future, I will be adding a CBD infused herb butter to the menu for my festival line- up. Its not just a meal but an experience! I have created an exotic menu featuring British fare, Texas breakfast and full flavours.
The chance to create visually enticing dishes and to please the pallets of new Austin is only the beginning of where this city can take us!
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Is life ever a smooth road?
I experienced a tough divorce when my children were babies and ended up homeless. At that time, I found refuge in a music studio a friend and fellow band mate was purchasing. I followed my artistic dream for a bit, but raising kids in a musician’s world wasn’t putting food on the table, so I picked up as many jobs working in food service as I could. I also enrolled in school to finish my Paramedic degree but trying to raise 3 kids and pursue that dream was just not feesable.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
Aside from being a Chef, I also am a freelance caterer, banquet events host and local musician. Of course, living in Austin, you are surrounded by the arts and entertainment on a daily basis so it’s only natural to become a part of that community. Being in a band and performing around Texas was one of the highlights of my many careers. I think what sets me apart from others is my ability to always bounce back, my resilience and my strength to make things happen.
Can you talk to us about how you think about risk?
I wrote the book on risk taking! I’m taking my biggest risk right now. I’m in my mid 50s starting a business on a shoestring. It’s been 2 years in the making purchasing everything I need little by little. I’m finally at the point were its all coming full circle. I am so excited to be able to see my dream come to fruition.
