Hi Ingrid, we’d love for you to start by introducing yourself.
Mi Bambuco Restaurant Colombian restaurant arose from a dream and the need to have at hand authentic and typical Colombian food from our region since there are more restaurants in the city but from a different region of Colombia, we wanted to show this country that there is a lot of variety of food Colombian that they still do not know. We decided with my sister to look for the opportunity to make this dream come true. We rented a place that was already in restaurant condition, we remodeled it and decorated it to our liking, this took about three months but when we wanted to open, the pandemic came and we had to be closed until the city authorized that we could open with takeout in May 2020 approx. That’s how I started in the kitchen and my sister delivering the food, when we were able to open to receive the guests, our great challenge began, which was to attract new customers for this new food, it has not been easy but we are achieving it little by little despite the fact that for a bad decision we lost the administration of the place for seven months. But from July 1, 2021 we resumed 100% management of our place and here we are, in a bit difficult times but always giving our best. We have relied on customer recommendations and on Facebook social networks, as well as convenient APPs to carry such as Dordash. We hope that our place can grow and that the Austin community can enjoy delicious Colombian food as well as feel for a moment as if they were really in Colombia.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Due to bad decisions in the desire to grow our business and believing in the wrong people, we lost our place for about seven months, but thank God we were able to recover it from the ashes where it was left. we had been open for such a short time, we lost it and recovered and had to start from scratch again but we have had a lot of faith and perseverance so here we are still standing in the fight

Mi Bambuco is the only representative restaurant of the Colombian center-west in the city of Austin, we have an extensive menu from finger food to seafood, it could be said that more than half of our menu you will not find in any other restaurant. We have the best meat empanadas with pineapple and garlic sauce that makes us unique as well as our best selling dish, the seafood casserole in coconut milk served with rich coconut browned rice. Our place is a quiet cozy space with Latin music that allows you to feel like you are in Colombia. Our goal is to make our guests interested in knowing more about our culture.
What does success mean to you?
Success is making your dreams come true, regardless of whether they are big or small, and feeling the same emotion for each one of them fulfilled.
