Hi Agnes, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Rabbit Coffee Co. started as a small idea rooted in community, hard work, and a love for bringing people together. I’m Agnes, the owner, and I’ve spent over a decade building and leading teams in both the wellness and dental industries, where I developed a strong foundation in operations, leadership, and customer experience. At the same time, I’ve always had a passion for creating spaces where people feel welcome and connected.

What began as a coffee truck concept quickly grew into something more. I saw an opportunity to build not just a coffee business, but a brand centered around consistency, quality, and community. That vision led to opening our first physical space, and now expanding into Taylor, where we’re continuing to grow and reach new people.

Every step of the way has been hands on, from building the brand to developing the team and creating the experience we want every customer to have. Today, Rabbit Coffee Co. represents more than just coffee. It’s about creating a space where people can gather, recharge, and feel a true sense of belonging.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It definitely hasn’t been a smooth road. Building something from the ground up comes with a lot of pressure, uncertainty, and moments where you have to figure things out in real time. There were times early on where I had to make tough decisions with limited resources, all while trying to stay true to the vision of what I wanted Rabbit Coffee Co. to be.

One of the biggest challenges has been balancing growth with consistency. As we’ve expanded, I’ve had to learn quickly how to maintain quality, build the right team, and put systems in place that allow us to scale without losing what makes us special. Staffing, long hours, and the day to day unpredictability of running a business have all been part of that process.

There’s also been a level of risk and responsibility that comes with owning something of your own. It pushes you to be more disciplined, more resilient, and more honest with yourself about what is and isn’t working.

At the end of the day, those challenges have shaped everything. They’ve made us stronger, more intentional, and more committed to building something that not only succeeds, but truly means something to the community we’re a part of.

Where do you see things going in the next 5-10 years?
Over the next 5 to 10 years, I see Rabbit Coffee Company continuing to grow as a community-centered brand while adapting to the changing needs of our customers. Our focus will remain on providing high-quality beverages and creating spaces where people feel welcome, but we plan to expand our offerings and services to make it even easier for customers to enjoy what we do, whether in-person or on the go.

We are also paying close attention to sustainability and local partnerships, making choices that support both the environment and our community. Technology will play a role in improving convenience and engagement, such as mobile ordering, loyalty programs, and more efficient operations, but the heart of our business will always be the personal connections we build with our customers and the atmosphere we create in our spaces.

Our goal over the next decade is to continue growing responsibly, opening new locations while maintaining the quality, consistency, and sense of community that Rabbit Coffee Company is known for, and ensuring that every visit feels welcoming and memorable.
