Today we’d like to introduce you to Ashley McCormack.

Hi Ashley, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Ellie Bar Co. was born out of determination, not convenience. As a mom of three, I was looking for a way to create additional income for my family while building something I could truly call my own.

I’ve always believed that when opportunities don’t present themselves, you create them. What started as a side hustle quickly turned into a passion as I poured my heart into every event, late-night planning session, and weekend wedding. Between a full-time career, raising kids, and running a household, Ellie Bar Co. became proof that with enough grit and determination, you can build something meaningful from the ground up.

Today, Ellie Bar Co. serves couples and families across Central Texas, but its foundation remains the same: a hardworking mom’s dream to provide for her family while creating memorable experiences for others.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
No, it definitely hasn’t been a smooth road. Like many small business owners, I’ve learned a lot through trial and error. Providing great customer service and creating memorable experiences came naturally to me, but learning the behind-the-scenes aspects of running a business—marketing, finances, logistics, contracts, and growth strategies—has been a completely different challenge.

Starting a business without a large investment meant being intentional with every dollar spent and finding creative ways to grow. One of the biggest struggles has been balancing affordable pricing for my clients while also ensuring the business remains profitable enough to sustain itself and continue growing.

At times, it’s felt like a constant balancing act between being a business owner, a full-time professional, and a mom. But every challenge has taught me something valuable, and those lessons have helped shape Ellie Bar Co. into what it is today.

Alright, so let’s switch gears a bit and talk business. What should we know?
Ellie Bar Co. is a Central Texas mobile bar service specializing in weddings, private events, and custom beverage experiences. While we offer bartending services, we’re known for creating personalized experiences through signature cocktails, mocktails, coffee bars, dirty soda stations, and other specialty drink offerings that reflect each client’s unique vision.

What sets us apart is our heart behind the business. Ellie Bar Co. was founded by a hardworking mom of three who started the business to create additional opportunities for her family while doing something she genuinely loves. Every event is approached with the same care and attention to detail that I would want for my own family and friends.

As a small business, we pride ourselves on building relationships with our clients, being responsive, flexible, and delivering exceptional customer service from the first inquiry to the last call of the night. We believe the bar should be more than a place to grab a drink—it should be a memorable part of the celebration.

What I’m most proud of is that Ellie Bar Co. has grown through trust, word-of-mouth referrals, and a commitment to making every event feel special. Our goal is simple: create an experience that guests remember long after the celebration ends.

Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
Absolutely. While Ellie Bar Co. may have my name behind it, I couldn’t have built it without the people who believed in me along the way.

My husband has been my biggest supporter from day one. He encouraged me to take the leap, supported the late nights and weekends, and never stopped believing in the vision, even when I doubted myself. As a small business owner, there are plenty of moments where you’re figuring things out as you go, and he’s been a constant source of encouragement through every challenge and success.

I’m also incredibly grateful for Morgan and Krystal. They have supported this dream through all of the growing pains that come with building a business. They’ve shown up, worked hard, adapted alongside me, and extended grace as I learned lessons and refined processes along the way. Their dedication, patience, and belief in what we’re building have played a huge role in the success of Ellie Bar Co.

And of course, my mom deserves a special mention. She’s always been one of my biggest cheerleaders and has never hesitated to jump behind the bar when an extra set of hands was needed. Whether it’s helping at events, offering encouragement, or simply showing up when I need her most, she’s been there every step of the journey.

No business is built alone, and I’m incredibly thankful for the family, friends, and team members who believed in this dream, supported me through my imperfections, and helped turn Ellie Bar Co. into what it is today.
