Hi Tahn’Zhay, thanks for joining us today. We’d love for you to start by introducing yourself.
My name is Chef Tahn’Zhay Easter, and my journey in the culinary world started from a genuine love for food, creativity, and bringing people together around a table. I’ve always believed that food has the power to tell a story, create memories, and make people feel cared for.

I began developing my culinary skills through hands-on experience and formal training, eventually graduating from the Culinary Institute LeNôtre in Houston, Texas. My education gave me a strong foundation in classical French techniques, while my experiences in professional kitchens taught me discipline, leadership, consistency, and the importance of working as a team.

One of the most influential parts of my culinary journey was studying Mediterranean fine dining in Doha, Qatar. Being exposed to different cultures, ingredients, techniques, and approaches to hospitality expanded the way I viewed food. It taught me that great cooking isn’t just about following a recipe it’s about understanding ingredients, respecting different cultures, and creating an experience.

Throughout my career, I’ve had the opportunity to work in a variety of culinary environments, including fine dining, resorts, hospitality, private chef work, and high-volume kitchens. Each experience has challenged me to grow and has helped shape the chef I am today.

My cooking style is a reflection of my journey. I love combining Southern soul food with modern fine dining, French technique, Caribbean influences, and flavors from around the world. I enjoy taking familiar ingredients and transforming them into something elevated, creative, and memorable.

Today, I’m continuing to grow as a chef while building my own culinary identity through Gentle Giant Cuisine LLC. My goal is not simply to prepare beautiful food, but to create meaningful dining experiences where people feel welcomed, cared for, and inspired.

I’m proud of how far I’ve come, but I’m even more excited about where I’m going. I’m constantly learning, experimenting, and challenging myself to become a better chef, leader, and storyteller through food.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
No, it definitely hasn’t been a smooth road. My journey as a chef has come with a lot of challenges, setbacks, and moments when I questioned whether I was really on the right path.

Working in the culinary industry can be demanding. I’ve experienced long hours, high-pressure environments, difficult work situations, and times when I had to push through exhaustion while still showing up and giving my best. There have also been moments in my career where I felt overlooked, underestimated, or had to start over when I thought I was finally finding my footing.

Outside of the kitchen, I’ve faced my own personal struggles and periods of uncertainty. There were times when I had to step away from what was comfortable, move around for opportunities, and take risks without knowing exactly how everything would work out. Those experiences taught me resilience and forced me to believe in myself even when things weren’t going according to plan.

But looking back, I wouldn’t change the difficult parts. Every setback taught me something. Every challenging kitchen made me stronger. Every time I had to start over taught me that my career and my identity are bigger than any one job or title.

The struggles have shaped the way I lead, the way I cook, and the way I treat people. They’ve taught me to value my craft, protect my passion, and never allow a difficult season to convince me that I’m not capable of achieving my goals.

My road hasn’t been smooth, but it has been meaningful. And I’m proud that I kept going.

Gentle Giant Cuisine LLC is my culinary business and an extension of who I am as a chef. I created the brand to provide elevated, personalized food experiences while still keeping the warmth, soul, and comfort that make food memorable.

I specialize in private chef experiences, intimate dinners, catering, meal preparation, and customized menus designed around each client’s needs. My culinary style is rooted in Southern soul flavors while incorporating modern fine-dining techniques, French culinary foundations, Caribbean influences, and inspiration from the different cultures and cuisines I’ve experienced throughout my career.

What sets Gentle Giant Cuisine apart is the personal connection behind the food. I don’t believe in creating a one size fits all experience. I take the time to understand my clients, their preferences, the occasion, and the feeling they want their guests to leave with. Whether I’m preparing an intimate dinner for two, creating a menu for a celebration, or preparing meals for a busy family, I want the food to feel intentional and personal.

The name Gentle Giant represents the balance I try to bring into everything I do. I’m passionate, driven, and serious about my craft, but I also believe hospitality should feel warm, genuine, and welcoming. To me, being a chef isn’t just about cooking it’s about serving people and creating moments they remember.

One of the things I’m most proud of about my brand is that it represents my growth and my willingness to build something of my own. Gentle Giant Cuisine is a reflection of my journey, my creativity, my culture, my experiences, and my belief that food can be both elevated and comforting.

I want readers to know that Gentle Giant Cuisine is about more than a plate of food. It’s about the entire experience from the menu creation and presentation to the flavors and hospitality. My goal is for every client to feel like they received something made specifically for them.

I’m building Gentle Giant Cuisine with the vision of creating a recognizable culinary brand known for exceptional food, genuine hospitality, creativity, and unforgettable dining experiences. I’m proud of where the brand is today, but I’m even more excited about where I’m taking it next.

Who else deserves credit in your story?
I wouldn’t be where I am today without the people who believed in me along the way. I want to give special credit to my dad, my late brother, and the chefs who have mentored me throughout my career. My dad taught me the importance of hard work and perseverance, while my late brother continues to be a source of inspiration and motivation for me. My chef mentors have challenged me, shared their knowledge, and helped me grow both professionally and personally. Each of them has played a meaningful role in shaping the chef and entrepreneur I am today, and I carry the lessons they’ve given me into everything I do.
