Inspiring Conversations with Holden Fulco of Parish Barbecue

Today we’d like to introduce you to Holden Fulco.

Hi Holden, thanks for joining us today. We’d love for you to start by introducing yourself.
Holden Fulco is Owner/Pitmaster of Parish Barbecue in Austin, TX. Holden was born and raised in Shreveport, LA and spent his childhood immersed in the culture and food of Louisiana. Fish fries and crawfish boils were a weekly occurrence, and good times with family always revolved around a great meal. Dreaming of opening his own bbq restaurant one day, Holden graduated from Louisiana Tech University with a degree in Business Administration, and moved to Houston to start a career in bbq. From 2018-2024, Holden cooked/managed at three bbq joints in the Texas Monthly Top 50, spending the last 4 years at Interstellar BBQ, helping them achieve the number-2 rank in Texas along with a Michelin Star. Holden opened Parish Barbecue in 2025 in Austin, bringing forward the flavors of Louisiana Cajun cooking and combining them with the best of Central Texas Barbecue. In less than one year of business, Parish Barbecue has earned numerous accolades, including a Michelin Guide Bib Gourmand.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Nothing worth doing is easy. It has been a long road of learning and practicing to eventually get to the point of opening my own bbq joint, and it is even harder once you open it. This business is full of challenges from ever increasing costs to volatility in how busy you are on any given day. But it is all worth it to pursue my passion of making the best bbq I can and making people happy through great hospitality.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
We are a barbecue food trailer in Austin, TX specializing in Central Texas style bbq with Louisiana cajun influences. We offer traditional Texas bbq with a cajun twist, bringing forth unique dishes that you can’t get anywhere else such as our smoked and confit pulled duck, house-cured ham, and crawfish cornbread dressing. We try to be familiar yet different and offer a flavor combination that brings something new to Texas bbq. I am proud of the fact that we have a small team that works hard and makes everything from scratch, and we put a high emphasis on customer service and hospitality. We want the experience of dining with us at our trailer to be the level of service one would receive at a brick and mortar restaurant.

Can you tell us more about what you were like growing up?
I grew up in a family of incredible cooks who fostered my love of food and the community it can provide. I always knew I wanted to be an entrepreneur, but wasn’t sure what that path would actually look like until I got into college and fell in love with Texas bbq. I knew then and there I wanted to open a bbq joint one day. I have always been a very competitive person, growing up in the outdoors hunting and fishing and playing sports. Now my passion is making an impact on people’s lives through our food and bettering our community here in Austin.
