Today we’d like to introduce you to Joaquin Hernandez.
Hi Joaquin, please kick things off for us with an introduction to yourself and your story.
One night after finishing the day, we met to eat and drink something; talking and thinking of something we could build together, we thought about selling sandwiches, but we didn’t want to sell just any sandwich but rather a special, different one. Joaquín, one of our co-founders, had the opportunity to work next to an Italian chef, so, thus, came the idea of creating “I PANINI” which translates from Italian “sandwiches”. The concept was making the making like a CIABATTA bread from scratch. This is how we decided to apply it to the farmer’s markets where we began to shape our brand and give it its own identity, gaining the trust and affection of our customers who tasted our Paninis week after week.
Then the opportunity arose to offer our Paninis at the Barton Springs pools, where now our customers could enjoy our menu six days a week while enjoying a day at the pool with friends and family. And so continues this dream that every day becomes a satisfying reality.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
We think there’s no smooth road to succeed. There’s always obstacles in the way. Thank God we had some experience to deal with all this of course it has been really hard. People of Austin has been a great support for us. We understand that, again, there’s no easy way, so we will never going to give up, that’s the secret to succeed
We’ve been impressed with I PANINI, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
We make it all from scratch. We make the bread “con amore”, our paninis are so fresh that nobody can believe it until they try it!. This is literally why are so different than others, is not a fast food business, is art, that is gastronomy; it’s all about at the end.
Do you have any memories from childhood that you can share with us?
All family holidays, for us is hard to be far away from them.
