Hi Emmanuel, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Cooking has always been a part of who I am—something that’s been in my blood since childhood. I grew up surrounded by entrepreneurship, especially from my grandmother, who not only passed down her love of cooking but also inspired my dream of one day owning a restaurant, just like she did. For me, cooking has always been a form of creative expression.
After years in the corporate world and retiring from the military, I knew it was time to finally follow my passion. One night, while sharing a batch of my maple gochujang wings with my sister, she said, “You could build a whole business just around this sauce.” That simple moment sparked a deeper conversation about the Austin food scene—and just three months later, I filed for our LLC. We secured a ghost kitchen, and things have only grown from there.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The journey hasn’t been without its bumps—entrepreneurship rarely is. On our opening day, the electrical system in our ghost kitchen tripped, leaving one of our fryers out of commission. It was a tough start, but we adapted quickly and made it work with just one fryer. Building traffic at our first location was another challenge. Fortunately, a fellow kitchen colleague mentioned that 5th Element Brewing was looking to partner with a food truck. We reached out, and their owner welcomed the idea with open arms.
We started serving under tents, but after battling rough weather and losing several tents to the wind, we eventually made the move into our food truck. Every challenge has pushed us to adapt and grow. At the heart of it all, it’s our incredible customers—and the love we have for what we do—that keep us moving forward.
