John Alfonzo: Meat Your Heart began as my personal vision in 2021, rooted in bringing flavors from my background to Austin through a food truck and a lot of hands-on work. Those early years were about building the foundation, understanding the city, and creating a brand people could genuinely connect with.
Jose Uzcategui: In 2023, the story evolved when I joined the business as a partner. While we’re family, what truly shaped our partnership was a shared work ethic, aligned values, and a clear long-term vision. Together, we focused on refining the brand, growing into larger events, and strengthening our presence in Austin without losing the soul of what made Meat Your Heart special.
John & Jose: Today, Meat Your Heart represents growth, consistency, and collaboration. We’re proud of how far the brand has come and excited about where we’re taking it next, always staying true to our roots while continuing to evolve together.

John Alfonzo: It definitely hasn’t been a smooth road. In the early days, the biggest challenge was building consistency while learning every part of the business firsthand in a very competitive market.
Jose Uzcategui: When I joined in 2023, the challenges evolved. The focus shifted to scaling, staying disciplined as the brand grew, and making sure growth never came at the expense of quality or identity.
John & Jose: Those challenges shaped how we operate today. Each obstacle helped strengthen the brand, sharpen our focus, and build Meat Your Heart with intention and long-term vision.

Jose Uzcategui: From a business perspective, we’re known for creating experiences, not just meals. Whether it’s large-scale events or our new home in St. Elmo inside Padel Club Austin, we focus on quality, flow, and connection. Brand-wise, we’re most proud of the trust we’ve built and the fact that people seek us out, not just stumble upon us.

Do you have any advice for those just starting out?

Jose Uzcategui: I’d add that having the right partner and systems in place makes a huge difference. Growth comes with responsibility, so be intentional, stay disciplined, and protect your brand as it grows.
