Hi Mimoza, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
My name is Mimoza Hajmeli. I moved to Austin, Texas twelve years ago with a strong desire to explore new opportunities in the United States. Before relocating, I spent many years working as a Quality Assurance Manager in the food industry in Rimini, Italy. After moving to the U.S., I owned and operated two restaurants, Liberty Hill Beer Market in Liberty Hill, Texas, and Berlin Döner in St. Petersburg, Florida. In my restaurants, I introduced the Italian dishes I raised my children with, adding love, authenticity, and personality to every menu.
Three weeks ago, I opened my newest concept, Dough It Up, where we specialize in homemade pasta, sauces, salad dressings, and fresh focaccia. Our Pasta alla Bolognese and Carbonara are customer favorites, followed closely by our homemade lasagna, Eggplant Parmigiana, and Zozzona sauce. All of our pasta is vegan, and we offer both vegan pasta and vegan pizza options. Our pizza dough is crafted with a 48–72 hour fermentation process, resulting in exceptional flavor and texture.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
I believe that anything worth building comes with its share of challenges; some tied to the process, others to relationships, and many to the personal growth required along the way. Not everything unfolds the way you expect, but courage, belief in your vision, and the determination to succeed have helped me achieve my goals. And when necessary, I’ve learned that sometimes a change in direction is exactly what’s needed to move forward

We specialize in homemade pasta, offering four different noodle shapes paired with a selection of house-made sauces, including Ragù alla Bolognese, Zozzona, and Carbonara. We also prepare our own lasagna, Eggplant Parmigiana, fresh focaccia, and handcrafted salad dressings.
Our pizza dough is exceptionally light, thanks to a 48–72 hour fermentation process, and our pizzas are baked in a traditional brick oven. To complement our menu, we serve a curated selection of Italian wines along with U.S. and German beers on draft.
