
Today we’d like to introduce you to Ron & Megan Watkins.
Hi Ron & Megan, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
With almost 40 years of combined experience in the coffee industry between Megan and I, we decided to take everything we have learned and build our little espresso truck. Right before Covid, we bought an empty box van and spent a little over a year building it from the wheels up. We made the trek with our truck from the Pacific North West all the way down to Kyle, Texas to be closer to family and enjoy the warmer weather (perfect food truck weather)!
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Building an espresso truck with no prior knowledge in construction wasn’t an easy task. But we feel like almost anything is possible if you watch enough YouTube. It seemed like it was taking forever to get it finished. There were a couple of times we wanted to call it quits, but we are so glad we stuck through it! After we finished the build, we weren’t sure how the county inspection was going to go. We must have read over the requirements and regulations a million times, and it all paid off. We passed inspection on the first go.
We’ve been impressed with Embrace The Grind, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Embrace The Grind Espresso Truck is parked in downtown Buda at The Willie’s Joint parking lot. We specialize in hand-crafted espresso drinks, nitro cold brew, infused energy drinks, smoothies, teas, lemonades, and more! We roast our beans daily in our truck. With over 75 different flavor options, we can craft 1000’s of different flavor combos to find what you love. We also carry a TON of sugar-free options! We’ve been told by customers from the east coast to the west coast that we have the best Nitro Cold Brew they’ve ever tasted. And our dub shots aren’t half bad either 😉
So maybe we end on discussing what matters most to you and why?
Knowing that what we do contributes to making people have better days. Making food or beverages is an act of love. There’s nothing more fulfilling than watching someone enjoying what you’ve made for them. We want to make sure not a single customer walks away with a beverage they don’t love. Our regular customers become an everyday part of our lives, and a lot of them become our friends even outside of the truck.
