Hidden Gems: Meet Eric Silverstein of The Peached Tortilla

Today we’d like to introduce you to Eric Silverstein.

Hi Eric, please kick things off for us with an introduction to yourself and your story.
I started Peached Tortilla as a food truck back in 2010. We started small because our initial capital was limited. A food truck offered us the opportunity to test the market with a lower amount of risk. Over time, we were able to build the business into a catering company, multiple restaurants and an event space.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
It has absolutely not been a smooth road. Every day, every week, every month is a challenge. That is the nature of owning your own business. The biggest struggle was early on, when we launched the food truck. It was difficult for us to not only find traction but figure out a financial model that made sense. We spent a lot of time in the food trucks not making money. Getting the business cash flow positive was our biggest struggle.

Appreciate you sharing that. What should we know about The Peached Tortilla?
The Peached Tortilla is a multi-faceted hospitality company that includes restaurants, full service catering and food trucks. We specialize in serving modern Asian comfort food. We our known for our unique cuisine, which we present in a variety of different ways. We offer a version of street food that can be found at one of our food trucks or at our airport location (inside ABIA). We offer a slightly more sophisticated full service menu at our restaurants (The Peached Tortilla & Bar Peached). Lastly, our full service catering menu incorporates a variety of items from both the food trucks and restaurants in addition to new items.

Let’s talk about our city – what do you love? What do you not love?
Austin is an amazing city. My favorite part about the city is the people. There are people from all over the country and everyone is extremely friendly. My least favorite part about Austin is the traffic.
