

Today, we’d like to introduce you to Gabriel Baldinucci.
Hi Gabriel, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Our family started in the pizza business in 1977, when my brothers and I were very young. We learned the business growing up in it, and I went on to do other things, but my brother Sal stayed in the business his whole career and got better and better at making pizza.
When I moved to Austin in 2020, I saw an opportunity for us to launch a new concept in Austin together.
Sal and Patricia decided to make the move, and we launched the new company.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It has not been entirely smooth. First, it was really difficult to find a location since so many concepts were trying to move to Austin.
As a first location, it was very competitive. Additionally, construction was delayed at the store because of supply chain issues with air conditioners and other materials. Finally, it was difficult for us to find Texas suppliers for some of the Italian ingredients that we needed.
I appreciate you sharing that. What should we know about Baldinucci Pizza Romana?
We decided to not only make the New York style pizza that we grew up with, but to do something new and different, which is Roman style pizza, or as it is called in Rome, pizza al taglio.
There are very few places in the U.S. that offer Roman style pizza, and we think it will be the next big thing. That’s because it is the perfect mix of light, crispy, chewy, and able to hold multiple toppings. It grew out of the bakeries in Rome, and it is square like a pan pizza, but it has lots of air bubbles in it, so it is light and airy and doesn’t leave you feeling heavy and full.
We import the flour from Italy, and our pans and ovens are imported from Italy as well, so they are 100% authentic. As is common with this type of pizza, we offer dozens of different flavors of pizza by the slice when you come into the store, so you can mix and match and try them all.
In addition, we use gourmet ingredients and chef-driven topping combinations so that you can enjoy premium gourmet pizza, but still get it by the slice. Some examples are our sausage, honey, and mascarpone with serrano peppers, our fig and arugula pizza with caramelized onions and roasted red peppers, and our quatro funghi with four types of mushrooms, hand whipped ricotta, and truffle oil.
We also offer great salads, calzones, involtini, sandwiches, gelato, and beer and wine.
