From Dream to Reality: How a Dinner Conversation Turned Into a Downtown Coffee Shop!
In November 2024, after deciding to leave my job in Austin, I found myself at dinner with a friend—now my partner—who asked what I wanted to do next. I didn’t have a clear answer, but I casually mentioned an idea that had always lingered in the back of my mind: opening a coffee shop that also sold plants.
To my surprise, she lit up with excitement. I, on the other hand, immediately dismissed the thought. Launching a coffee shop in Austin felt impossible without major capital, a long runway, and a prime location—all things I didn’t have.
But within 48 hours of that conversation, the universe seemed to respond. My friend called to tell me about a space for lease on the busy downtown square of Lockhart, where she lives and co-owns another business. The space was already well-suited for a café. With my background in residential construction, I took possession in mid-December and quickly got to work. By February 1, 2025, we held our Grand Opening.
It’s a story of right place, right time, right people—and taking a leap of faith with no real plan, just a spark of an idea and the will to chase it.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It might sound a little woo-woo, but I honestly think the universe knew I needed this change. From the moment I voiced the idea, doors started opening with surprising ease. We found the right space almost immediately, had a strong support system, and everything came together quickly. Compared to many start-up stories, the road has felt remarkably smooth.
That said, starting a business—especially in a small town where I wasn’t yet fully known—comes with its own set of challenges. I had to learn how to navigate local regulations, juggle construction timelines, source equipment on a tight budget, and build a team from scratch. The pace was intense, and being away from home so much during the launch was personally tough at times. But I have to say, the City of Lockhart was incredibly helpful and supportive throughout the process, which made a huge difference. And thanks to the clarity of the vision and the people around me who believed in it, even the tough moments felt like part of something bigger and worthwhile.
Alright, so let’s switch gears a bit and talk business. What should we know?
Thorn & Bred is a local, women-owned café and plant shop serving fresh-made food crafted by local chefs, thoughtfully brewed Lavazza coffee, and a wide selection of houseplants. It’s a cozy, grounding space where guests can sip, graze, and unwind while surrounded by greenery and good company.
I am most proud of the feedback from our customers – that we provide great coffee in a calm, cozy, friendly space where they can work remotely, meet with friends or coworkers, and eat delicious food that makes them feel like they’re eating at home.
I want your readers to know that we offer a full-scale, Lavazza coffee menu, breakfast tacos, delicious baked goods from local baker, Moonstone Baking, fresh in-house made foods packaged to-go, such as salads, soups, sandwiches, curries and desserts, with vegan options. We do catering for all types of events. We have a wide array of indoor and outdoor plants, pots, gardening supplies, gifts and books. We offer retail snacks and beverages, beer, wine, NA spirits and THC beverages. We also have a robust social calendar, featuring monthly events like Beats & Beans – a morning DJ set on second Saturdays of the month, Thai food pop-ups, First Friday events, Pilates, Good Dog Bingo, and more. Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
Joanne Irizarry has been my mentor, cheerleader, advocate, and investor—I truly wouldn’t be here without her. Her belief in me and this vision has made all the difference. My life partner, Andrew Sullivant, has supported me every step of the way. While I’ve been away long hours getting the business off the ground, he’s held things down at home—and on top of that, he’s also my go-to handyman, building and fixing countless things along the way. I’m deeply grateful to both of them.
I’m also incredibly grateful to the Lockhart business community. Local business owners have welcomed me in, shared their wisdom, and guided me through what it means to run a business in this town. And the locals—some of whom come in every single day—have been the heartbeat of this place. They spread the word, bring their friends and family, and continue to show up in ways that remind me daily why I took this leap.
