Hi Marino, we’d love for you to start by introducing yourself.
La Parrilla LAC started when Marino moved from Chicago to Texas. Growing up, his family cooked tacos, and food was always a part of his life. While working as a bouncer and security guard in Chicago, Marino realized that what he really wanted to do was cook.
In Georgetown, he met Enrique at a local food park. They decided to go into business together and created La Parrilla LAC, focusing on smokey Mexican food and South American specials.
They later moved to Hutto to take over The Hippo Escape food park. Since then, they’ve helped grow the local food scene by bringing in other food trucks, including Dosa & Chaat, G&M TexMex BBQ, and Hutto Spice Route Mediterranean Cuisine, creating a diverse place for the community to enjoy.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Starting out wasn’t easy. As the new guys in town, we had to prove ourselves and earn trust in the community. On top of that, the ups and downs of the economy made every step forward a challenge. Being tucked away in little downtown Hutto added to the struggle, but it also pushed us to work harder, stay creative, and stay true to our food. Those challenges shaped who we are today and made La Parrilla LAC stronger.

Brand-wise, we’re most proud of how the Hutto community has embraced us. From loyal regulars to curious first-timers, people love everything new we bring to the park. Our beautiful food truck park, complete with sidewalks, picnic tables, live music, and karaoke nights, has become a space where the community comes together to celebrate good food and great company.

What were you like growing up?
Growing up on the South Side of Chicago was all about family, fun, and a little bit of risk-taking. My parents both came from big families, so I was always surrounded by cousins, tías, and tíos. I was always rolling deep with my primos, and if we were out at Lake Michigan, you’d find me bouncing between the water and the grill, trying to do it all at once.
