Thank you so much for sharing your story and insight with our readers. To kick things off, how did you get started?
I’ve always been passionate about throwing down homemade honey hot wings; my family and friends would ask me to make them for games or get-togethers. After relocating from El Paso three years ago, we found ourselves missing wing spots of our hometown and didn’t find a new spot that had us returning for more here. The dream of opening a Wings and Things restaurant had always lingered in my mind. Encouraged by the unwavering support of my wife and family, we decided to take the plunge and start a food truck. Initially, I juggled the food truck on weekends while managing a construction business during the week. I realized for the food truck to thrive, I needed to commit fully. We contacted local breweries, hoping to secure a spot in their rotation lists. Witnessing customers’ loyalty, who seek us out wherever we park for the day or share our page, has been immensely gratifying for our small business. The influence of social media and word of mouth has been truly remarkable. Today, we receive invitations from breweries and communities to join their events, a gesture for which we are profoundly thankful. On this journey, we’ve forged valuable friendships with fellow food truck entrepreneurs, like KO BBQ, who generously shared their contacts and offered invaluable advice. My family’s unwavering support has been my anchor throughout this venture. The overwhelming backing from the community has touched our hearts deeply, and we’re thrilled that our food has been embraced with such enthusiasm. As we embark on our first year of this adventure, we recognize that the growth we’ve experienced is just the beginning. We’re eager to continue expanding while remaining steadfast in our commitment to delivering quality with every bite. We’re so excited that we will now be permanent at Whitestone Brewery in Liberty Hill!

We all face challenges, but would you describe it as a relatively smooth road?
I’ll preface by recognizing how blessed we’ve been. I attribute a lot of our success to the support of my family and the quality of our food. I take a lot of pride in what we’re serving. The truth is, if I didn’t eat it, I wouldn’t sell it. There are so many unknowns in this industry. It’s been challenging to gauge how much food to buy and prep for how to price food in this unstable economy. One of my biggest challenges has been learning to accept that there will be some people who won’t like my food- and it’s not that it isn’t good; people have different tastes and palettes.

Let’s switch gears a bit and talk business. What should we know?
The quality of my food is so important to me. I want people to enjoy their food and leave them wanting to return for more. It’s so cool when people come back to the window to tell me, “Those are the best dang wings I’ve ever had.” One of the things that set me apart is aside from making sure I’m always serving quality food, I enjoy making connections with people. I love that I’m able to make friends out of customers.

Is there anything else you’d like to share with our readers?
I want to say I’m so thankful for everyone who’s ever visited the food truck. I’m so grateful for the repeat customers who follow our truck around. I can’t wait to see where Lil Nicky’s is in a year. I know this is just the beginning, and I’m so excited!
