Community Highlights: Meet Krysta Jeffrey of The Piquant Patisserie

Today we’d like to introduce you to Krysta Jeffrey.

Hi Krysta, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I’m a pastry chef with an extreme passion for creating new and complex flavors. I originally went to culinary school at le cordon blue in Scottsdale Arizona. I didn’t finish, I got pregnant with my daughter and moved back to Texas but have over a decade of experience in commercial kitchens and am huge advocate for anyone interesting in pursing baking as a passion, to do it! Culinary school isn’t the only way. While the experience was amazing, I’ve learned just as much through the industry and self teaching. After a break from baking/creating publicly, I’ve opened my first pastry truck, specializing in gourmet, French inspired pastries. My favorite thing to do is a southern or Texas twist to my favorite French desserts! We’re currently located at sirens food park in San Marcos tx. Besides keeping up with the production for the pastry truck, I also do custom cakes and catering for weddings, birthday, corporate events, and large parties.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I started out making cakes under cottage baking laws when my daughter was small, which was impossibly hard with a newborn. In general, home baking is hard to make lucrative. Support your local home bakers! I gave up on my dream for a while but decide late last year that life is too short to not chase your dreams.

I have hashimotos and EDS among other health issues and truly believe life is what you make it!

My daughter is nearly 12 now. She shares in some of my conditions and some unique to her. It’s important to me that she knows chasing your dreams is worth it. Even if life decided to make things a little harder for you. So this year, I went all in and bought my pastry truck. It’s important to me to be a light in the community and give back so right now, profit is going fully into expanding and creating jobs.

As you know, we’re big fans of The Piquant Patisserie. For our readers who might not be as familiar what can you tell them about the brand?
Pastry truck specializing in French and Texas inspired pastries. We are most know for our creme brulee and eclairs! Right now, there is buzz about our Guimauve (French marshmallows). Our cake jars are also pretty popular. We also do custom cakes and I pride myself on keeping cake prices affordable. Come out for macarons (not macaroons!), cookies, brownies, creme puffs, and more.

We love surprises, fun facts and unexpected stories. Is there something you can share that might surprise us?
Up until recently, I was a one woman show! I often ask people how I do it, especially with having a fully time job outside of the business. Most people are shocked to find out about my autoimmune issues as well. I always advocate for kindness cause you have no idea the internal battles people are dealing with. Many autoimmune conditions are debilitating internally, even when you don’t look sick on the outside.

I dream in pastries. I’m always thinking about the next recipe I should create or flavor profiles I want to try out. I’m currently working on a signature pastry that I think is going to make our pastry truck a local staple 😁 coming in August 2026
