Today we’d like to introduce you to Scot Krueger. Them and their team share their story with us below:
Bold Kitchens, LLC…it started with a dream of helping others…and then we had to pivot. Bold Kitchens was founded in 2017, by husband and wife food Industry duo Jodie Chau and Scot Krueger, with the intention of providing expert-level help at entry-level prices to new founders in the food industry. Our backgrounds are unique as we are both deeply skilled in different areas of food manufacturing. Having met while working at Nestlé, I knew that Jodie was the one! Her poise in a conference room and her ability to negotiate multi-million dollar contracts is second to none. Processing Plant oversight and process improvements are my strengths.
Back in 2017, after having our second child, we did some deep-level research and saw that shared kitchens/ghost kitchens were becoming a thing, but what they lacked were key attributes that could really help new founders jump to the next level without breaking the bank and falling into debt. Efficiency is usually an oversight as you are growing a business. You spot buy on ingredients and packaging and get killed before you are even out of the gate. You scrap entire runs due to oversight on things like labels, machine deficiencies, quality errors as well as poor sanitation practices. This was going to be our niche. We just needed one thing… a building in LA. After searching for months, we were unsuccessful in our search and we landed some consulting work, so we pivoted. Once COVID hit and travel wasn’t an option, we started finding our roots back in the kitchen, and we pivoted once more. And that’s how the idea of High Fidelity Foods was created.
Now we are rushing to get our name out in the Austin/San Antonio area as we are launching our branded line of Sauces, High Fidelity Foods in 2022. The current lineup is our garlicky Sambal, the Sweet Thai Chili, and our tingly Szechuan Chili Oil Sauce. You can find us popping up at local music festivals and events in the ATX/SATX area, with a crazy food lineup with anything from Bulgogi Chicken/Beef Nachos, Vegan Thai Curry, Pho broth with meatball skewer in a cup, to Braised Porkbelly Bao’s, Vegetarian Tom Yum noodles, and our popular Bubble Waffles and Chicken or the Sweet version for a fun treat! Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
With two full-time jobs and three young ones, nothing comes easy when trying to get a business off the ground. In addition, we make it a bit extra-challenging by trying to front all the money for the project vs borrowing. Too many people start out with visions of grandeur before a dollar has been made. The can be detrimental to the business.

Bold Kitchens is on a simple mission with their brand High Fidelity Foods…to make simple foods taste great without all the bs! With a combined 35 years in food manufacturing, we know what to do, and if we don’t, we have resources to call upon that do! Our line of Asian inspired sauces will take your tastebuds on an epicurean trip though the various regions of Asia. We love food, but we love sharing it with our HFF fam even more! With no food colorings or preservatives, we achieve amazingly vivid colors in our sauces that are truly mesmerizing. We are only beginning with our branded line of Sauces, stay tuned for what we have in store! You can find us floating back and forth on I-35, showering patrons of events, fairs, and festivals, from Austin to San Antonio, with crazy food accompanied by our sauces.
What quality or characteristic do you feel is most important to your success?
Time management, honesty, and perserverance. We are open books from the start and want our partnerships to be the same. It’s a juggling act with normal life activities and a family, and that comes first. Keeping the machine pushing forward, full steam ahead is the only way. When you are tired and there isn’t an ounce of you left, you still have figure out a way to make it happen and get it done.
