Conversations with Anna Mayeux

Today we’d like to introduce you to Anna Mayeux.

Hi Anna, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Food was making me sick. I created Annie Eats to make my whole week healthy, easy, and yummy. I’d been dealing with my own health issues, my hormones were badly out of balance, and every doctor I visited gave me a different diagnosis and underwhelming solutions. One doctor even told me I had PCOS and offered heavy medication as the only solution. That’s when I started to do my own research. I learned that food has a huge influence on how I feel and my hormones.

Working a 9-to-5, I didn’t have the time to prepare hormone healthy food for myself every day before and after work. One weekend, I started prepping big batches for myself: gluten-free, seed-oil-free, whole foods. That was enough to get me through the busiest stretch of the week without thinking about food.

My coworkers wanted in too, so I started posting the weekly menus, mostly just for fun and to share what I was cooking. An Austin influencer found it, ordered a kit, and posted about it on TikTok. Within 24 hours I had over a hundred messages from women with similar stories, all wanting their week handled for them too. I got my health permits, found a commercial kitchen, and made over 300 meals that first weekend.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has not always been a smooth road. I’d never worked in a commercial kitchen before, so that was a real learning curve. I studied business with an entrepreneurship minor in school, which helped a little on the operations side, but figuring out the little things, like timing everything so it all comes together, is a skill you only get good at through doing it over and over.

The hardest part was balancing it with my full-time job. I’d work my 9-to-5 all week, then work on Annie Eats when I got home and then be in the kitchen all weekend cooking. I was exhausted. As things grew, I was fortunate enough to bring on some kitchen help and at the end of May, this year I transitioned to Annie Eats full time. I feel so grateful to get to work on something I am so passionate about and most of the time doesn’t feel like work at all.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
My weekly meal prep service specializes in hormone healthy meals that are made with farm fresh ingredients, packed with protein, and are gluten-free and seed-oil-free. The menu rotates every week based on what’s in season at the farms I source from. The produce is organic and mainly from local Texas farms, and the protein is grass-fed beef and free-range chicken.

What I love most about Austin is how fast it’s growing. There’s so much energy right now, new businesses, new people moving here, so much opportunity if you’re willing to go after it. It’s been amazing to grow Annie Eats within and alongside a city that’s growing just as quickly. I’m so grateful for the strong sense of community here that supports small, local businesses like mine.
