Today we’d like to introduce you to Sarah Miller.
Hi Sarah, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Hospitality has really been the common thread throughout my entire life. I started working in restaurants when I was 15, and what began as an early job quickly became a career I genuinely loved.
I spent more than 14 years as the Director of Marketing and Special Events for Black Sheep Lodge and Haymaker. During that time, I had the opportunity to help build two successful brands, develop community partnerships, lead marketing initiatives, and produce everything from neighborhood events to large-scale activations. That experience taught me that hospitality is about so much more than food and drinks—it’s about creating an atmosphere where people feel welcome, connected, and excited to come back.
I eventually took that experience and founded Milleroom Concepts, a hospitality staffing and concessions company. We manage beverage operations for festivals, concerts, sporting events, and other large public gatherings throughout Central Texas. Building my own company has allowed me to expand into staffing, sponsorship activation, concessions management, business development, and large-scale event operations.
Now, my husband, Dallas, and I are taking on our most exciting project yet as the new owners and operators of Oakwood Public Market in Dripping Springs. Oakwood brings together a coffee shop, neighborhood market, arcade, restaurant and bar, and event space—all under one roof. It feels like a natural next step for us and an opportunity to combine everything we’ve learned throughout our careers to create a true gathering place for our community.
My career has allowed me to experience hospitality from nearly every angle—from working in restaurants and building brands to producing events, growing a business, and managing high-volume operations. At the heart of it all, I love bringing people together and creating memorable experiences. That is what has continued to motivate me throughout every stage of my career, and it’s what Dallas and I hope to bring to Oakwood.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It definitely hasn’t always been a smooth road, but I think the challenges are what have shaped me the most. Hospitality is an incredibly rewarding industry, but it can also be demanding and unpredictable. There are long hours, late nights, tight margins, staffing challenges, and constant pressure to make sure every detail comes together—even when things behind the scenes don’t go according to plan.
Starting Milleroom Concepts came with its own learning curve. I had to move beyond the creative and guest-facing side of hospitality and learn every part of running a business, including finances, contracts, staffing, permits, inventory, insurance, and business development. Managing large events also means being prepared to solve problems quickly and stay calm when thousands of guests are depending on your team.
One of my biggest ongoing challenges has been balancing the demands of entrepreneurship with raising a family. There is rarely a perfect time to take a risk or pursue a new opportunity, so I’ve had to learn to trust my experience, build a strong support system, and keep moving forward even when the path isn’t completely clear.
Taking on Oakwood Public Market has brought a new set of challenges, from financing and lease negotiations to permitting and preparing to operate several different concepts under one roof. It’s a big undertaking, but every challenge we’ve faced has made Dallas and me more prepared and even more committed to what we’re building. The road hasn’t always been easy, but it has been meaningful—and I wouldn’t trade the lessons, relationships, or resilience I’ve gained along the way.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
My work centers around creating hospitality experiences that bring people together. Through Milleroom Concepts, I specialize in managing beverage and concessions operations for festivals, concerts, sporting events, brand activations, and large public gatherings throughout Central Texas. We handle everything from staffing, permits, insurance, inventory, and point-of-sale systems to bar design, sponsorship execution, and onsite operations.
I’m known for being able to see both the big picture and the smallest details. I love the creative side of hospitality—building a brand, developing an event, and creating an experience—but I also understand the operational side required to make it successful. I know how to take an idea and turn it into something that functions smoothly, serves guests well, and makes financial sense.
Now, my husband, Dallas, and I are bringing that combined experience to Oakwood Public Market in Dripping Springs. Oakwood includes a coffee shop, neighborhood market, arcade, restaurant and bar, and event space. Our goal is to create a welcoming community gathering place where people can stop for coffee, bring their families, enjoy a meal, attend an event, or meet friends for a drink.
What I’m most proud of is the reputation and relationships I’ve built throughout my career. Hospitality is a relationship-driven industry, and people trust me to follow through, solve problems, and take care of their guests, teams, and brands. I’m also incredibly proud that I built Milleroom Concepts from the ground up and now have the opportunity to apply everything I’ve learned to Oakwood.
What sets me apart is the range of my experience. I’ve worked inside restaurants, led marketing and special events for established hospitality brands, managed high-volume festival operations, built my own company, and now stepped into ownership of a large, multifaceted venue. I bring creativity, operational experience, and a genuine understanding of what makes people feel connected to a place. For me, hospitality isn’t simply about serving food or drinks—it’s about creating experiences and building community.
