Our story begins in 1930 when my great-grandfather founded BEHER in Guijuelo, Spain, laying the foundation for a company deeply committed to the art of Iberico pork production. As the fourth generation to carry this legacy forward, I’ve always felt a profound sense of responsibility to honor our family’s tradition while embracing opportunities to innovate and grow.
Each generation has contributed to shaping BEHER into what it is today—an internationally recognized leader in premium Iberico products. My path has been about building on this foundation, expanding our presence globally, and bringing the unique flavors and quality of Iberico pork to new markets.
The highlight of BEHER is that we are vertically integrated from the production of pigs, to the curing and final presentation of the products; focused on the famous Heritage-breed 100% iberico pork, all our farms are certified in animal welfare and we only grow free range pigs.
Now, with our expansion into Austin, I’m proud to carry this legacy forward, combining nearly a century of heritage with the vibrant, forward-thinking spirit of this incredible city.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It hasn’t always been a smooth road; every success story comes with its challenges. As a company that has been family-run for nearly a century, each generation has faced its own unique struggles while striving to preserve and enhance BEHER’s legacy.
One of the most significant challenges has been balancing tradition with modernity. As a heritage brand rooted in craftsmanship, we’ve worked hard to maintain the authenticity of our products while adapting to evolving markets and consumer demands. The global expansion, in particular, required navigating complex regulations, building new supply chains, and educating international audiences about the unique qualities of Iberian pork.
Economic crises and shifts in market trends have also tested our resilience. For instance, ensuring sustainability and ethical farming practices while maintaining affordability for our customers has been an ongoing challenge, but it’s one we’ve embraced as a core value.
Finally, our expansion into Austin presented new challenges—such as understanding the local market, building trust with American consumers, and establishing a manufacturing footprint in a new country. However, these challenges have also been opportunities for growth, creativity, and collaboration.
Through it all, the dedication of our team and the strength of our family’s vision have guided us. These struggles have made us stronger and more innovative, positioning us to continue thriving in new markets like Austin while staying true to our roots.

BEHER, short for Bernardo Hernández, is a family-owned enterprise specializing in premium 100% pure Iberico pork products. Founded in the early 1930s by my great-grandfather, Bernardo Hernández Blázquez, in Guijuelo, Salamanca, the epicenter of jamon iberico in Spain, we have upheld a tradition of excellence for nearly a century.
Our expertise lies in the meticulous production of Iberico hams and sausages, including Jamón Ibérico de Bellota, lomo, chorizo, and salchichón. What sets us apart is our comprehensive control over the entire production process:
– Breeding: We maintain several farms across Spain and Portugal, housing over 3,000 purebred Iberian sows and 70 males, ensuring the purity of our livestock.
– Feeding: Our pigs are raised on a natural diet of pastures, acorns, and ecological feeds, promoting both quality and sustainability.
– Processing: From traditional curing methods to innovative packaging, we adhere to stringent quality and food safety protocols, blending time-honored techniques with modern advancements. Tradition that we are bringing to Austin, where we are establishing a curing factory and a slicing facility to ensure the freshness of our products.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
The food industry, particularly the premium meats and specialty products segment, is undergoing significant changes, and I see a few major trends shaping its future over the next 5–10 years:

Consumers are increasingly demanding transparency in food production and a commitment to sustainability. From how animals are raised to the carbon footprint of operations, accountability will become paramount. At BEHER, we’ve already embraced these values by ensuring our pigs are raised in natural, sustainable conditions. In the future, I expect to see more companies aligning with these principles, as sustainability becomes a standard rather than a differentiator.
2. Health-Conscious Eating
