Inspiring Conversations with Andrew Toldo of Lonestar Libations

Today we’d like to introduce you to Andrew Toldo.

Hi Andrew, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Raised in Hampton Bays, New York, my background was rooted in hospitality long before Lonestar Libations existed. From dive bars to fine dining restaurants across the Hamptons and into NYC, those early years taught me how to work with people, move fast, and stay comfortable in chaos.

After finishing radiology school, Austin became home in 2015. The city, the energy, and the Texas culture immediately felt like the right fit. Over the last decade, I’ve worked full-time in emergency medicine throughout some of Austin’s largest hospital systems.

Three years ago, Lonestar Libations was born with a small beer cart serving intimate gatherings and local events. Soon after, an old horse trailer was transformed into a mobile cocktail bar, which really changed the trajectory of the business and helped shape the brand into what it is today.

Since then, Lonestar has grown into everything from private events to large-scale festivals across Texas. Looking back, hospitality taught me how to create experiences for people, medicine taught me how to handle pressure, and Austin gave me the opportunity to build something that truly feels like my own

We all face challenges, but looking back would you describe it as a relatively smooth road?
One of the biggest challenges was completely changing career paths and learning entrepreneurship in real time. I used to sleep easy at night because I never had to take my work home with me, now my brain never stops firing.

I went from a very structured role in emergency medicine, where systems are built and protocols are clear, to building something from the ground up where I had to figure out every piece of the business as I went. Operations, logistics, builds, staffing, permitting, sales, there wasn’t really a roadmap to this game.

It was a big shift going from a controlled clinical environment to something as fluid as events and entrepreneurship, where you’re constantly adapting and problem-solving on the fly. But a lot of what I learned in the hospital setting ended up translating directly into how I built the business.

We’ve been impressed with Lonestar Libations, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Lonestar Libations is a fully licensed alcohol vendor built for events that want more than just a bar setup. Whether it’s a wedding, concert, festival, corporate event, or private event, we provide turnkey bar services designed to feel seamless from start to finish.

The easiest way to describe us is: think food truck, but a bar.

What sets us apart is the culture behind the brand. We’ve built a team that genuinely enjoys hospitality and creating experiences for people. We care about the details, the guest experience, and the relationships we build along the way — not just with clients, but with other vendors, venues, artists, and entrepreneurs throughout Texas.

At the end of the day, Lonestar Libations is about bringing people together. We just happen to do it through great drinks and unforgettable events.

One thing that’s probably surprised me most throughout this process is how much becoming a husband and father changed my perspective on business.

When I first started Lonestar Libations, I was driven by creativity, ambition, and the excitement of building something from the ground up. I was willing to work nonstop and say yes to everything. But once my wife and daughter became the center of my life, my definition of success started to change.

Now, it’s not just about growing a business — it’s about building a life I’m proud of and creating something meaningful for my family. It’s made me far more intentional with my time, my energy, and the people I surround myself with. I still work hard, probably harder than ever, but I’ve learned that being present at home matters just as much as showing up professionally. Its been a delicate dance but I am grateful for every single step.
