Inspiring Conversations with Cathy Hernandez of Reset Health Coaching

Today we’d like to introduce you to Cathy Hernandez.

Hi Cathy, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today.
My nutrition journey began 20 years ago when my mom had a heart attack at the age of 68. At the time, I was working at an elementary school in Round Rock, Texas, and the only thing I could think of was getting to El Paso as soon as possible. I remember exactly where I was and what I was doing when I got the phone call that my mom was being rushed to the hospital. By the time I got to the hospital, a heart catheter had already been performed and it showed the clogged artery was extremely close to the main artery, and if they unclogged it, there was a possibility that it would affect the main artery and cause a massive heart attack in the operating room. The only other option was to perform open heart surgery; I felt my heart sink to the floor. I was terrified! I was beyond worried; I didn’t want her to undergo open heart surgery.

She consented to surgery and went under. Her chest, including the breast bone, was cut open to expose her heart. The incision was about 10 inches long. Thank God she made it out okay with no issues. While in recovery, I sat with her for hours at a time. It was heart-wrenching to see the amount of pain she was in. She needed to cough in order for her lungs to stay clear of liquid. They gave her a teddy bear called “Cough-a-lot” (she still has it to this day) so she could hold it close to her chest and cough. It was then that my entire life changed…

Having a sweet tooth all my life, I would buy chocolate, chips, and sodas almost daily from the vending machine. I made and ate dessert every day after dinner. After witnessing what my mom went through, I went cold turkey!! Knowing that the outcome could have been much worse was a scary thought. I didn’t want to go through that. Nor did I want anyone I love to go through what my mom was going through. Hence my passion for nutrition was born!

I’m sure you wouldn’t say it’s been obstacle-free, but so far would you say the journey has been smooth?
I wish I could say it has been a smooth road, but it hasn’t. There have been many challenges along the way. One of the biggest challenges was navigating through all the nutrition debacles like “eggs are good, eggs are bad,” “carbs are good, carbs are bad.” It was all very confusing and exhausting. Besides all of the perplexing information, there was and is the constant challenge of getting people to accept new understandings of nutritious foods.

We’ve been impressed with Reset Health Coaching, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
I am a Certified Nutrition and Wellness Consultant, Certified Holistic Nutritionist, Certified Weight Management Specialist, Certified Sports Nutritionist, Certified Nutrition Consultant-Master Level and National Diabetes Prevention Program Lifestyle Coach. I specialize in whole food, plant-based eating and am passionate about health and nutrition. I believe that when we provide our bodies with real whole foods, we reset our bodies from the inside out and live healthier lives. Food is better than medicine. One of my favorite things is creating and teaching people how to make their favorite meals and desserts with plants full of flavor, protein, fiber, vitamins, and minerals. I create most of my recipes without sugar, eggs, oil, or butter. I love to take on a challenge! I also offer all types of nutrition counseling, full body composition analysis, and 12-month pre-diabetes classes, which are free to Medicare participants that qualify.

Alright, so to wrap up, is there anything else you’d like to share with us?
Your health should be one of your top priorities, so don’t let it slip through the cracks. We tend to focus on everything and everyone else and lose sight of what is truly important, our health. Every fork or spoonful you put in your mouth could be the most powerful form of medicine or the slowest form of toxin.
