

We recently had the chance to connect with Jonathas Dias and have shared our conversation below.
Hi Jonathas, thank you so much for taking time out of your busy day to share your story, experiences and insights with our readers. Let’s jump right in with an interesting one: Have you ever been glad you didn’t act fast?
I’m extremely glad I never pulled the trigger on opening up a Food Truck or Mini Bistro. Throughout the last two years I’ve realized there’s so much more I need to learn, So many more places that I need to go, And a lot more food that I need to try and experience and that’s when I connected with Chris Villalobos. I’ve never used the smoking method when it came to cooking but I became extremely intrigued with Texas Style BBQ and smoking meats, So I put my head down and began to learn as much as possible following the ways of Chris and how he had his entire set up I was hooked, So then I started helping out at the University Of Texas Tailgate “Amigos Tailgaters” smack dab in the middle of where it all goes down when it comes to TEXAS FOOTBALL and Tailgating. I’m Still in the process of learning smoked meats but at the same time I’m still cooking privately for VoVo’s Kitchen which is Brazilian Cuisine with a twist of Italian.
Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Jonathas Dias, Brazilian born and reside in Buda Tx. I’m a private chef and provide Brazilian cuisine with a twist of Italian. VoVo’s Kitchen is running but for the last 2 years going into 3 I’ve been working and learning from Chris Villalobos who’s a Pit Master originally from New Mexico and has been doing all the smoking and cooking for “Amigos Tailgaters” the last 6 years. When he gave me an opportunity to intern and just learn the techniques I was all in.
Amazing, so let’s take a moment to go back in time. Who were you before the world told you who you had to be?
Before the world told me who I had to be in my mind I always wanted to be a super star I didn’t care if it was movies, singing, dancing, acting I always wanted to be the center of attention and I’ve realized the older I get the more I step back and let my kids do all the talking.
Was there ever a time you almost gave up?
There’s been many times I’ve given up, Lucky for me my wife was always there to lift me up my brothers and sisters were always there and my kids were always there. Once you’re able to realize what’s real and who’s actually there it becomes so much easier mentally.
Next, maybe we can discuss some of your foundational philosophies and views? Is the public version of you the real you?
As far as me growing up in my later years in Austin and finishing up High School at Austin High I feel I always been the same person. It was either Music or Basketball and everybody who knows me will tell you the same but it’s the cooking that came out of nowhere. It even suprised me.
Okay, so before we go, let’s tackle one more area. What will you regret not doing?
I won’t regret reaching for my goals that I had when I was young. Coming up in Houston you had to hold your own so that toughness and relentlessness taught me a lot because the amount of Talent in Houston is insane so when I went to American Idol and The Voice I tried to keep the same competitive mentality.
