Hi Ricardo, thank you so much for taking time out of your busy day to share your story, experiences and insights with our readers. Let’s jump right in with an interesting one: What do the first 90 minutes of your day look like?
In short? Wake up, Prayer up, clean up, and coffee up.
Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Ricardo Galindo,
I had my story previously published in Voyager back March 14th 2023. I had just moved back from Baja California (Mexico) after starting a BBQ food truck and due to Covid was forced to shut the business down.
We moved back to San Antonio, Texas late 2021. We started doing a little catering and party events. I also started working at BBQ Outfitters, selling bbq grills and designing outdoor kitchens.
All that while following my BBQ passion by creating content on YouTube (Ric’s BBQ and Specialties)
I’m still filming content and still designing outdoor kitchen at BBQ Outfitters, however I had a huge life change back on September 13 2023 I was diagnosed with Throat Cancer. Which has led to a rough 11 months. After 35 rounds of radiation and 12 rounds of chemotherapy and the Prayers from family, friends and the support of my beautiful wife Raquel, I am now Cancer free!
Great, so let’s dive into your journey a bit more. What relationship most shaped how you see yourself?
During my diagnosis, I realized I really needed to rethink my Relationship with my Christian life and decided it was time to go back to church. I’ve learned that God’s word is medicine for our spirit and body, and the way we experience its power is by praying to God. It won’t work for us if we just have a Bible on a shelf and leave it on that shelf. We have to open it and read it, use it to plant faith into your heart for HEALING and VICTORY. The promises of healing in the Bible Can and will HEAL you!
Was there ever a time you almost gave up?
Within the first 24 hours of my diagnosis I had no idea what to think.. After losing my father to Cancer a few years ago I was scared but I knew God wasn’t done with me yet and I wasn’t going to give in or give up.
Next, maybe we can discuss some of your foundational philosophies and views? What’s a belief or project you’re committed to, no matter how long it takes?
I would say focusing on walking the walk, being a leader of men and getting back to selling Barbecue. We still have the food truck and now that I’m getting my health back, I am more than ready to start cooking again. Just get the business back up and running. All while giving the Glory to God.

I would say not starting my business when I was younger. I always enjoyed feeding friends and family and have wanted to do it on a daily level. I started doing that in 2019 and was forced to shutdown. I only wonder where’d I be if I had never stopped or if I had actually started years before.
