Hi Issac, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
In 2020, in the heart of Austin’s Hyde Park, Sammataro began as a pandemic project when founder Issac Flores built a handmade wood-fired oven in his backyard. What started as a backyard pop-up quickly grew into a full-fledged pizza trailer , and within months Sammataro had captured a loyal following. Today, just a few years later, Sammataro is considered one of Austin’s favorite pizza spots , cherished as much for its New York–worthy pies as for its neighborhood soul.
Sammataro specializes in wood-fired, New York–inspired pies crafted with old-school technique and premium ingredients. Each batch of dough undergoes a slow 48-hour fermentation, developing a deep flavor and a chewy, blistered crust.
Toppings remain simple and high-quality: housemade mozzarella and vibrant California-grown tomatoes, all prepared with reverence for tradition. This purist approach has earned Sammataro a nomination for best pizza in Austin — a testament to its time-honored craft.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It’s been such a beautiful journey. Of course we have our days. But truly, nothing makes me happier when handing a pizza and a smile to a customer.
Can you tell our readers more about what you do and what you think sets you apart from others?
I oversee the whole operation. We do our best to give customers the best service and pizza possible.
I’m known for building community and providing a space for other creatives to connect.
Most proud of building Sammataro from the ground up with a handmade oven during a chaotic moment in the world. That’s not just hustle, it’s vision. building something out of nothing, and people felt it.
Who else deserves credit in your story?
My son Hudson Sammataro Flores. The reason behind it all. He keeps me going.
